I’m so excited to share my Avocado Deviled Eggs recipe with everyone this week!! Eggs are extremely nutritious. In addition to a ton of nutrients, just one egg contains 13 essential vitamins and minerals. At just 78 calories, they are a nutritional powerhouse and meets a variety of nutritional needs for all ages. These little gems are an excellent source of choline, selenium, high quality protein, vitamin D, vitamin B12, phosphorus and riboflavin. Wow, that’s a mouth full! They are also an excellent source of protein and all nine amino acids. Just writing this makes me want to go eat some eggs!

AVOCADO DEVILED EGGS
Did you also know that avocados contain more potassium than bananas? Avocados have nearly 20 vitamins and minerals in each delicious bite. Some of these include calcium, iron, magnesium, potassium, copper, manganese, phosphorus and zinc. As if that’s not enough they contain vitamins A, B-6, B-12, C, D, E, K, thiamin, riboflavin and niacin. Ahh…but wait, they are also an excellent source of dietary fiber with one serving containing almost 40% of the daily requirement! It is no wonder the avocado is considered a superfood. So we need to find more ways to enjoy the wonderful avocado fruit. Furthermore I bring you the avocado deviled egg. So good you can’t even tell there is no mayonnaise in these.
The first step in this process is to boil the eggs. You would think that boiling eggs to a hard boil is done the same by everyone. As I look on the internet, a lot of sites have a different process they go through. Well this is what I do. Hope it works well for you. I gently place my eggs in a pot that is big enough that the eggs are in a single layer in the pot.
Then I fill the pot with water covering the eggs by an inch or two. If the eggs float, throw them out. They are too old by then. I add a teaspoon of baking soda and put them on the stove. Bring them to a boil and continue to boil for 5 minutes. At this time I remove them from the heat, but I let the eggs sit in the hot water for 15 more minutes. Finally, rinse with cold water and let the eggs cool in the cold water bath until chilled through. I would think maybe 15 minutes should be good.
Next, cut the eggs in half the long way and remove the yolks.
Put the yolks in a bowl and crumble as much as possible.
Mix the yolks with the mashed avocado, vinegar, mustard, salt, pepper, dill and lemon juice either by hand or in a food processor.
This next step is optional. I like to put my mixture in a Ziploc bag to help with squirting it into the egg whites. Cut off the corner and you have an instant piping bag.
Fill egg whites.
Finally, sprinkle the Avocado Deviled Eggs with paprika and you are done!

Peanut Butter Cookies With Lard
Avocado Deviled Eggs
Prep time: 15 minutes
Cook time: 5 minutes
Yields 12 servings
Ingredients:
6 eggs
1 Avocado, mashed
2 tsp prepared mustard
2 tsp vinegar
1 tsp lemon juice
¼ – ½ tsp dill
¼ tsp salt
Dash of pepper
Directions:
1. Add eggs to a medium saucepan. Fill with water to cover the eggs plus an inch. Add 1 tsp baking soda (optional) to help release shells from eggs. Bring to a boil and boil for 5 minutes. Remove from heat. Let eggs rest in the hot water for an additional 15 minutes. Rinse with cold water. Cool.
2. Cut eggs in half the long way. Remove the yolk. Add yolk to a bowl. Set whites aside. Mash yolks completely.
3. Add mashed avocado, mustard, vinegar, lemon juice, dill, salt and pepper. Stir until completely combined.
4. Fill egg whites with avocado mixture.
5. Sprinkle avocado deviled eggs with paprika.
6. Keep refrigerated.
