BASIC CHICKEN SOUP

Basic chicken soup is truly one of my favorite comfort foods.  It just warms your whole body.  I love to make soup when it’s cold outside, but it’s definitely good any time of the year.

My previous post with the Roasted Rosemary Chicken ties into this recipe very well.  I love to use my leftover chicken with bones to make a hearty delicious soup the whole family loves.  With this in mind, I take the leftover bones and meat and I put into a crock-pot.  Fill the water to the top of the crock-pot and cook the meat and bones for 12-24 hours.  This will pull all the gelatin out of the bones.

Gelatin is now being recognized as a wonderful addition to our diet because of all its health benefits.  It helps to aid digestion, reduce inflammation, and helps us to have beautiful skin.  Gelatin also helps improve our nails, hair and improve our joints.  In addition to it having an anti-aging effect.  This is just some of the benefits of the gelatin that we pull out of the animals bones.  Therefore, what better way to get this gelatin than to cook up your scraps from the night before.

 

BASIC CHICKEN SOUP

 

This recipe that I am going to share with you is just the basic fundamentals of chicken soup.  The beauty of this is you can customize this with your favorite spices.  It will also have the flavor of the spices you cooked your chicken with.  However, it is also very tasty just the way it is.

Ok, so now that the chicken is done slow cooking, strain the broth into a stock pot or large Dutch oven.  Separate the chicken from the bones and add the chicken back into the soup, cut into small pieces.

Chop up the veggies.  When you chop your vegetables, just keep them all around the same size.  Cook them a little longer if they are bigger chunks.  While the vegetables are cooking, I make the noodles.  I personally prefer to make the noodles on the side  so the soup doesn’t get all starchy.

Next, add salt to taste.  I really don’t say a specific amount because the amount of liquid you have will depend on how much salt you use.  If you want to add more liquid you can add chicken broth to make a bigger batch of soup.  Just add more veggies also.  After your veggies are done, remove from heat and add the noodles.  It is a really simple recipe but very delicious.  I hope you enjoy Basic Chicken Soup as much as I do!

BASIC CHICKEN SOUP

Ingredients:

1 chicken carcass with a little meat on it
5 carrots
5 stalks of celery
1 large yellow onion
Salt to taste
8 ounces wide egg noodles

 

Directions:

1. Put chicken carcass in crock-pot. Cook on low for 12-24 hours.  Strain liquid into stockpot or large Dutch oven.
2. Remove chicken from bones and add back to stockpot.  Bring to a boil.  Turn heat down to medium.  Add chopped vegetables and cook until tender. 20-30 minutes.
3. While the vegetables are cooking, in a separate large saucepan cook noodles at the low end of recommended cooking time.
4. When the noodles and veggies are done, add noodles to soup. Stir to combine.  Enjoy your Basic Chicken Soup.
