CRUNCHY ALMOND GRANOLA

Unfortunately, I have been ill since the new year has begun.  I was feeling like a had a sinus infection towards the end of 2017 that ended up full force after the new year began.  Hopefully I am at the tail end of this now.  Thus one of my goals for this year is to eat a whole lot healthier.  I have been focusing on learning to cook new ways and also providing healthy snacks for my family.  One snack that is so easy to make at home and has major health benefits is my homemade crunchy almond granola.

The beauty of making your own crunchy almond granola is you have the control over every ingredient in your recipe such as, nuts, seeds, grains and also fruit.  Even your choice of sweeteners and fats but also the amounts of these is all in your control.

Furthermore, the healthiest snacks are the ones you make yourself.  So, even though I have been afflicted with a nasty illness these last couple of weeks, I was still determined to make as many health conscious meals and snacks as possible.  And I am going to tell you that this is so delicious!

I like granola baked on the little darker side but if you don’t care for that then by all means, bake yours for less time.

One of my favorite ingredients in granola is slivered almonds.  Baked they are so heavenly.  In addition, they are a nutritious powerhouse.  Almonds are heart healthy, help reduce inflammation, support healthy brain function, and also loaded with fiber among many other health benefits.

This crunchy almond granola recipe is packed with many beneficial ingredients that you will fall in love with.

First, mix all the dry ingredients together in a bowl. This will ensure that your spices will get blended evenly.

Next, mix your liquids in a glass measuring cup.  Using a liquid measuring glass makes drizzling over the dry ingredients a little easier.  Now just stir all your ingredients together well and bake.  So easy!

Crunchy Almond Granola

Prep time: 5 minutes
Bake time: 60 minutes
Servings: 6

 

Ingredients:

3 cups rolled oats
½ cups chopped pecans
¾ cups slivered almonds
1 tsp cinnamon
½ tsp allspice
1 tsp salt
1 cup shredded coconut
1/3 cup melted coconut oil
2/3 cup honey
1 tsp vanilla

 

Directions:

1. Preheat oven to 300 degrees.
2. Combine all dry ingredients in a large bowl.  Add coconut and mix well.
3. Melt coconut oil.  Add honey and vanilla to melted coconut oil.  Drizzle liquids over dry ingredients.  Stir until well combined.
4. Spread mixture on 2 sheet pans covered with parchment paper.
5. Bake for 45-60 minutes, depending on your preference.  Do not stir.  Let cool.
