HEALTHY HOT CHOCOLATE

The recent snow storm has inspired my post today.  Sometimes it feels like winter is going to last forever.  I was outside in the wintery weather for awhile today and I was chilled to the bone.  I definitely needed something to warm me up.  Hence, the healthy hot chocolate.  Finding a healthy hot chocolate is not easy in the grocery store.  Too many ingredients that I can’t pronounce.  This recipe has real ingredients that will make you smile.  You will feel good giving this to your kids.  This hot chocolate recipe has no refined sugar, it is vegan friendly and also has a bit of protein.  I sweeten this wonderful drink with dates.  Who would have thought dates could replace sugar.  Alright, time for the good stuff!

First, chop the dates into small pieces.  They blend up a bit better when chopped.  Then add all the ingredients to the blender.  Blend until smooth.  This should take 1 or 2 minutes.

Then, just add your chocolaty goodness to a medium saucepan and bring to medium heat.  That’s it!  Super simple.

Prep time: 3 minutes
Cook time: 5 minutes
Servings: 4

 

Ingredients:

1 cup pitted dates
4 cups almond milk
2 Tbsp. unsweetened cocoa powder
1 tsp vanilla
1/3 cup raw cashews
Pinch of salt

 

Directions:

1.  Chop dates into small pieces.

2.  Add all ingredients to blender.  Blend until smooth

3.  Pour chocolate mixture into medium saucepan.  Bring mixture up to a medium heat.  Pour heated mixture into cups and enjoy!
