HOMEMADE MARINARA SAUCE

As I was sitting here wondering what I should make this week, I realized that I used a basic homemade marinara sauce quite often.  It is good for many recipes and very useful to have a good recipe for this.  I love to make my own sauce because it tastes so much better when you use fresh ingredients.

I planted a garden this year and it was the first time it actually produced enough to make something.  Not only did I have enough to make a few dishes but I had lots of leftovers.  I was ecstatic and gave away a lot of my bounty with my friends and family.  It was so exciting for me.  Needless to say I am easily amused.

I have seven tomato plants that produced quite the bundle.  Some did get ruined from the insane amounts of rain we had in the early part of the summer.  I had a bit of blossom rot.  In light of this, I still did end up with a lot of tomatoes.  I canned twelve quarts so far to use over the winter.  I still have many tomatoes to come.

Using fresh garden vegetables in your sauce is really something I highly recommend.  Especially heirloom tomatoes.  They have a taste second to no other tomato.  If you have access to fresh ingredients, please use these.  Now if you are using fresh tomatoes, you will need to peel them.  To do this just immerse tomatoes in hot water, just under boiling, for 1-2 minutes.  Then transfer
to cold water for a minute.  You will then be able to remove the peel somewhat easily.

With this in mind, you can start to cook up your very versatile homemade marinara sauce.  Start by bringing a medium saute pan to medium-high heat with the olive oil in.  Add the onion and garlic and cook until they are soft and golden in color, about 5-6 minutes.

Add the tomatoes and spices then bring to a boil.

Reduce the heat and simmer for 30 minutes.  Remove from heat.  It’s that simple.

Homemade marinara sauce is definitely worth the extra effort.  It taste so much better than store bought.

HOMEMADE MARINARA SAUCE

Prep time: 10 minutes
Cook time: 40 minutes
Servings: 1

 

Ingredients:

2-3 Tbsp. olive or avocado oil

3 cloves garlic, thinly sliced

1 medium onion

3 ½ Lbs. tomatoes (2 large cans)with juices

3 Tbsp. fresh basil, chopped (or 1 ½ Tbsp. dried basil)

1 Tbsp. fresh thyme (or 1 ½ tsp dried thyme)

Salt and pepper to taste

 

Directions:

1. Bring olive oil to a medium-high heat in a large sauté pan.  Add onion and garlic and sauté until onions are soft.  About 5-6 minutes.
2. Add the tomatoes, thyme, and basil.  Bring to a boil.  Reduce heat and simmer for 30 minutes.
3. Season with salt and pepper to taste.
4. Remove from heat.  At this time let your sauce cool a bit.  If you are using immediately, than it is all ready.  If you are going to freeze this for later use then cool completely before packaging
for the freezer.  I will make this in large batches and freeze in separate containers to make future meals easier to make quickly.
