PEANUT BUTTER COOKIES WITH LARD

I have started baking with lard just a few years ago and have absolutely loved everything I have made.  Some of the things I have made are pie crust, cookies, and pastries, but I also use lard to saute vegetables and to fry eggs.  The taste is unbelievably good.  If you have never tried to cook or bake with lard, I highly recommend it.  I have found that when baking with lard, it is best to use it when it has been chilled.  I made these peanut butter cookies with lard yesterday and they were so amazing!  As a matter of fact, they were simple to put together and made me realize that I never want to buy pre-made dough again.

I had to make cookies for a bake sale recently and had so many compliments on these cookies.  If you don’t have access to lard, you can use shortening but I try to avoid it because of all the trans fats associated with it.  Therefore, I choose lard for all my baking and cooking.

First, whisk all the dry ingredients in a bowl and set aside.  Second, cream together the lard, sugar and peanut butter.  Next add the milk, vanilla and egg and mix just until blended.  Slowly add the dry ingredients to the creamed mixture until just blended.  Using a cookie scoop, drop peanut butter cookies on a sheet pan lined with either parchment paper or a baking mat.

Now, just bake these peanut butter cookies for about 8-10 minutes.  Leave on cookie sheet for about 2 minutes and transfer to a wire rack to cool.

Homemade Peanut Butter Cookies with Lard

Prep time: 20 minutes
Bake time: 8-10 minutes
Servings: 36

 

Ingredients:

1 cup peanut butter

½ cup lard (or shortening)

½ cup granulated sugar

1 large egg

½ cup brown sugar

1 teaspoon vanilla

3 Tbsp. milk

1 ¾ cup all purpose flour

1 tsp salt

¾ tsp baking soda

½ tsp baking powder

 

Directions:

1. Preheat oven to 350 degrees.  Line baking sheet with parchment paper.

2. Whisk together the flour, salt, baking powder and baking soda and set aside.

3. Cream together the peanut butter, lard and sugar.  Add vanilla and milk.  Then mix well.

4. Add the egg and beat until just blended.

5. Slowly add the dry ingredients to the creamed mixture until just blended.  Roll into 1” balls, slightly flatten with a fork in a crisscross pattern.

6. Finally, bake for 8-10 minutes.  Let cool on cookie sheet for 2 minutes before transferring them to a rack to cool completely.
