OLD FASHIONED PIE CRUST

Okay, seriously this is the best old fashioned pie crust I have ever had.  In other words, my grandmas recipe has taken on a major improvement (no disrespect meant, grandma).  I am the type of cook or baker that doesn’t settle for a recipe as is.  I feel this uncontrollable need to try new ideas until I have exhausted my resources.  Consequently, I have had some epic fails.  But I have also had some great discoveries.  This recipe definitely falls into the greatness category.

Recently, I made a chicken pot pie for a family friend that had fallen on hard times with her health.  She is like a second mother to me and I cherish her greatly.  So anyway, I sent this pie over to her house and her husband tracks me down to tell me that it was the best pot pie he has ever had.  Wow, what a compliment!  At this time I realized that I had made a winner.  I decided to make it a few more times to make sure it will turn out the same every time with great success.

I grew up eating homemade pie somewhat on a regular basis.  We never bought our pie crust.  Unfortunately, my mother always used shortening because that was what everyone thought was a healthy option.  Well, now we know that lard is so much better.  It makes a great pastry also.  This old fashioned pie crust is so flaky and delicious it’s almost hard to imagine that I made this.  You absolutely have to try this.

OLD FASHIONED PIE CRUST

So, my first tip with this is to use cold lard and cold flour.  I put my flour in the fridge about an hour before I am ready to start.  Cold ingredients seem to make this keep its flakiness for days…if your pie lasts that long.  This recipe will make enough for 3 shells ( 2 bottoms & 1 top or 3 bottoms).  If you don’t want to make 2 or 3 pies then you can definitely freeze this for another time.  I tried to reduce the recipe, but it just wasn’t the same.

Just mix all ingredients until blended and you are ready to go.  So simple.  I use my kitchen aid with the dough hook but this can definitely be mixed by hand.

Roll out the dough to the size of your pan and you are good to go.

Old Fashioned Pie Crust

Prep time: 10 minutes
Servings: 3

Ingredients:

1 egg yolk
½ cup milk
2 Tbsp. vodka
1 tsp sugar
1 tsp salt
2 ½ cups flour
1 cup lard (or shortening if necessary)

Directions:

Mix all ingredients together until combined.  Sprinkle worktop with bench flour.  Roll 1/3 of the dough until it’s the size you need.  Bake according to your pies directions.
