TWICE BAKED POTATOES

I just love potatoes.  Fried, baked, mashed, grilled or any other way they can be made.  They are one of my all time favorite foods.  I like to tell myself they are healthy, but unfortunately, by the time I am done with them, they are far from it.  Although this may be true, it does not hinder my obsession with potatoes.  Last week, my older brother celebrated his 25th wedding anniversary.  That is quite an accomplishment in itself.  So to celebrate, he wanted to have an intimate dinner with just a few of his closest friends.  He was making an elaborate meal and asked me to make some twice baked potatoes.  Hence, the recipe I have chosen for the week.

To be honest, I had never made twice baked potatoes before, but I did have an idea of what I wanted in them.  I originally didn’t have bacon in the recipe, but I couldn’t resist.  If you don’t care for bacon, just omit.  But I am going to tell you, I had one person at the party tell me he would marry me just for the potatoes.  I am thinking it was because of the bacon.

First, get some decent size baking potatoes from your local market.  You will get two servings out of each one, so keep that in mind when buying.  Bigger the better with this recipe. You will want to bake them until tender, piercing them with a fork beforehand.  Let them cool slightly for handling.  Cut them in half the long way and scoop out the insides, leaving ¼” of the potato in the skin.

Combine the insides of the potatoes and the rest of the ingredients in a large mixing bowl.  Blend well and just scoop the mixture into the potato skins, distributing evenly into the shells.  Top with some remaining shredded cheese and they are all ready to bake.  It’s that simple.

TWICE BAKED POTATOES

Prep time: 10 minutes
Bake time: 1 ½ hours
Servings: 4

 

Ingredients:

2 large baking potatoes
¾ cup sour cream
3 Tbsp. butter
1 tsp dry ranch dressing mix
¼ tsp salt, or more to taste
¾ cup shredded cheddar cheese, divided
4 strips bacon, cut in ½ “ pieces and fried until crispy

 

Directions:

1. Preheat oven to 400 degrees.

2. Pierce potatoes with a fork 3-4 times.  Bake potatoes for 1 hour or until tender inside.

3. Let potatoes cool just until you are able to handle without burning yourself.  Scoop out insides, leaving ¼” of potato on the skin.

4. Combine the potato with ½ cup cheese and the rest of the ingredients in a mixing bowl.  With a stand mixer or a hand mixer, blend until thoroughly incorporated.

5. Scoop mixture into shells, dividing evenly.

6. Sprinkle remaining cheese on top of potatoes.  Bake for 20-30, checking periodically to make sure cheese is not burning.
